Another awesome recipe from number one tester, Ancho Amanda!

Trying to figure out what to do with those lost and forgotten vegetables that live in the shadowlands of the crisper drawer? We’ve got you covered.

The goods

This recipe has, for the most part, stuff that you have hanging around the kitchen which is always a plus. If you don’t have carrots you could always use sweet potato or squash but make sure to cut to the appropriate size for roasting purposes.

First things first, get that oven going because you know it’s going to take forever. A nice 425 degrees to be exact. Next, get your carrots bathed and naked. Oh my! Cut them in half and then cut those halves in half the other way. Think hotdog vs. hamburger, this is grade school stuff guys. After you’ve had your way with them, lay them in waiting on the parchment paper lined roasting sheet.

The drizzle.

Now for the drizzle. Combine all other ingredients in a bowl and then toss those carrots until they glisten. Make sure you spread them all back out so that they cook evenly and don’t spread cooties. Roast for 30 minutes, checking periodically because there’s a fine line between beautifully roasted and burnt.

These were served up with some leftover Easter ham because why not. However they do make a great snack all on their own. The heat level was higher than I expected but it was a crave-able burn. Give it a shot, add in your own flare and let us know what you think!
